Rename wtperf checkpoint schema jobs

      All of the wtperf runners use dashes in their names except 2, checkpoint_schema_race.wtperf and checkpoint_stress_schema_ops.wtperf. Those should be renamed to use dashes instead of underscores. Any Jenkins job needs to be updated as well.
