 Description

To reproduce, use the $set operator to update a FLE2-encrypted field (e.g. first) with a new value. Afterwards, if you dump the ECOC collection, there will be an entry whose fieldName value is "$set.first", instead of the expected "first".

The v6.0 branch commit message above includes an incorrect "cherry-picked from" commit ID by mistake. It should be "5ab8714a12cbe55b6a3ca417e0a53b228625a057".
