For example, if an index was created with 2 fields in a produce release x, then there is a need to add one more field to that index in the following release, Is there a way to alter an existing index instead of dropping an old index and recreating a new index? |

There is no way to do this. You can create the new index first, and then drop the old one. This will ensure there is always an index for your queries. |
