I'd like to start some long mongorestore processes with a --log option so I don't have to use screen/tmux to track progress.

yeah, our regular scripts do something similar, but I've found that something like --log would have been useful when I'm having to do something odd from the command line.

You want to background it?
Have you tried
nohupm mongorestore XXX >& foo.log?

to do right we'd need a --fork and --logpath.
most utilities i've seen tend not to have that though
