Use moveCollection to get tracked unsharded collections for timeseries update tests

      Support for updates on timeseries collections is only feasible over tracked collections. Therefore, since tracking unsharded collections on creation (PM-3670) finally won’t land on v8.0 meanwhile support for updates on timeseries collection (PM-2919) will, users will need to track their unsharded collections through the moveCollection command.

      The goal of this ticket is to use moveCollection instead of createUnsplittableCollection command on update timeseries tests to reflect the flow users will need to follow.
