Release Kafka GA (1.0) Docs

Description

The Kafka connector is going GA on January 22.  We need to indicate that the connector is version 1.0 and GA (remove mentioned of Beta, if any) in our docs.

Notable feature enhancements in the GA release:

Scope of changes

Update the version selector to 1.0 and remove any mention of beta in the doc set.
