[<= v8.0] Fix invalid accesses to invalidated CollectionCatalog after closing storage engine snapshot

      SERVER-90992 uncovered and fixed two instances (1 & 2) of invalid access to CollectionCatalog after closing the storage snapshot. In addition to that, it added guardrails so that this cannot happen in the future.
      This ticket is to backport fixes to old branches, without necessarily backporting the guardrails (to limit the risk)
