Add missing header include checks

      Some libmongoc headers do not include mongoc-prelude.h and were likely skipped in CDRIVER-2839. I've confirmed that this isn't an issue for libbson, as all of its headers include bson-prelude.h.

      Note: CDRIVER-2839 supposedly added an Evergreen task to test for this, so I'm not sure how these missing instances were not caught.
