Drop or migrate Evergreen tasks using archlinux-* distros.

Background & Motivation

The C driver documents Archlinux under Supported Platforms: https://mongoc.org/libmongoc/current/installing.html#supported-platforms and has tasks using the the distros: `archlinux-large`, `archlinux-test`, `archlinux-build`.

Removing use of `archlinux-*` distros is requested in BUILD-17364:

Is it possible for the C driver to drop the support for Arch? If we can stop supporting Arch in Evergreen it would really help the Build team to improve platform support with BUILD-17026 and BUILD-17015 coming up.

If an Archlinux build is not available in Evergreen, we could consider testing with Docker.
