Remove databases and collections related stats from telemetry on instance-fetched event

      They seem to be not that important and block us from decoupling instance data fetching to improve "time to first query". As we are not even moving this telemetry to the new Segment one, it's fair to say that we should be good just dropping it from the telemetry without replacement, at least for now
