Update how we set our ai endpoint config so previous defaults don't override

      Currently when a user has the beta with the existing `atlasServiceConfigPreset`  preference set, which loads the `AtlasServiceConfig`, and then we update the `atlasServiceConfigPreset` default to something else in a new beta release, their previous setting persists. This is how preferences work in Compass.

      I'm thinking we set it to one value now that we're farther along. Might not need a preference anymore.
