Update build script for FLE to include MacOS and Linux libmongocrypt binaries

      When we create a build for GitHub, we currently include all the binaries needed from the bin folders. However, MongoDB.Libmongocrypt only copies the libmongocrypt binaries needed for the current operating system to the bin folders. We will need another solution when we support FLE for MacOS and Linux.
