To enable delete.on.null.values you have to make sure your Id strategy is a key strategy which is obvious after you think about it for a few seconds however it is not immediately obvious and the error which is thrown never reaches the logs likely due to a bug in AMQ streams, strimzi, or Kafka Connect. It took digging into the source to figure out why my configs were failing because there is no note and the error is not logged before being thrown into the void that is Connects error handler.
