PR https://github.com/mongodb/mongo-go-driver/pull/2449 committed an incorrect implementation of the updated prose test linked in DRIVERS-3547. Specifically, it didn't update the contention factor set on the "find" query and didn't remove the additional assertions.

Definition of done:

• Update CSE prose test 12 case 2 to match the updated description in https://github.com/mongodb/specifications/commit/d30d717beb4c470545996c4b75604a67c169a19d
• Add the "Client Side Encryption Tests latest RHEL 8.7" and "Client Side Encryption Tests rapid RHEL 8.7" Evergreen variants to confirm the change works.
