I think we could use the latest stable gradle wrapper version without much concern.

Also a good opportunity to get rid of ancient deprecated gradle usage like in java driver.

It is definitively a multi-module gradle project. For now we could only one skeleton module named 'mongo-hibernate-core' and use JDK17 for its source and target versions.
