      Context

      PyArrow 26.0.0 was released on 9 Oct 2026. I looked at the changelog and do not see anything of direct relevance to PyMongoArrow, but we still need to bump to support the new version.

      Definition of done

      Bump supported version to 26.0.

      Pitfalls

      Make sure there are no test or build regressions.
