      Context

      Once we can test against a public mongot image, we should use that as the default. However, when there are new features being worked on we'll need to test against the internal ECR image. We should add an option to use the latest internal ECR, and an option to use a specific image, using environment variables.

      Definition of done

      Update default image and add the override capability.
