BSON corpus code and symbol tests are partially testing the wrong types

      Downstream changes: drivers should sync their BSON corpus spec tests with mongodb/specifications@c4cc034.

      We should fix the incorrect code and symbol tests and audit the rest of bson corpus tests to make sure they're using the proper types too.
