This ticket is to review the CI matrix.

As part of MongoDBs green sustainability drive we should review how much resources the CI matrix takes up and if we can keep coverage at the same level without needlessly duplicating testing.

We now test mongodb versions 3.6 - latest, across jdks 8, 11, 17, 21 and with single node, replicasets and sharded clusters, various auth mechanisms and with / without TLS. Is there any fat that can be cut?
