      Hi Team,

      In the Source Connector we implemented a way of resetting the offset using the offset.partition.name property.

      It would be useful if we implemented something similar for the Sink Connector, allowing the user to either start reading from the beginning of the topic or the very end.

      Could this functionality be added to the Sink Connector?
