Split from https://jira.mongodb.org/browse/MONGOID-5210.
Mongoid permits using symbols and strings to declare field types:
field :foo, type: :string
There should be a way to specify custom field types using the symbol/string syntax.
Note that, as with https://jira.mongodb.org/browse/MONGOID-5327, when a custom type is added to the alias mapping, the target needs to be checked to be a class (and not, for example, a symbol/string).
