When we published mongosh 2.0.0, we included Node.js 16 in our test matrix in order to be able to point users who are still on Node.js 16 towards that as a workaround, should we ever be unable to build Node.js 20 on RHEL7 (which is not an officially supported combination).

Now that Node.js 20 is in maintenance mode, patches to Node.js 20.x that would impact our ability to build on RHEL7 as a base operating system have become exceedingly unlikely. Consequently, we can drop Node.js 16 from our test matrix.
