Adopt crypt_shared library 8.1.0+

      MONGOSH-2177 and related tickets highlight that MongoDB 8.1.0 raised the actual platform minimum requirements for the crypt_shared library on x64/arm64 to the official 8.x server platform minimum requirement (glibc >= 2.28).

      That means that platforms which we support, but the 8.1.0+ server does not, like Amazon Linux 2, won't be able to do automatic CSFLE/QE with the crypt_shared library from it.

      For now, it seems like the most sensible choice would be to stick with the 8.0.x crypt_shared library and update to 8.1.0 when we are okay with the platform changes that come with it (both for Linux and potentially also macOS, where SERVER-101020 is currently a blocker).
