Some FLE options not being serialized

      Bug reported by a user via a comment on a libmongocrypt diff:
      https://github.com/mongodb/libmongocrypt/pull/139#pullrequestreview-590890618

      Due to changes on this line all the other options like for example keyAltNames, besides options.masterKey, are not being serialized and therefore not passed to the context. Was this something intentional?

      We should fix this, add a regression test, and reply to the user.
