Clean up mongo_logger tests

      The current mongo logger tests are thorough but will be difficult to maintain, especially once client options are also supported.

      Acceptance Criteria

      • Refactor the existing mongo logger tests into a more maintainable format
      • Evaluate the tests for redundancies and remove redundant tests.
