Utilize mongoc_client_get_handshake_description for ServerDescription

      When load balancer support is implemented, mongoc_client_get_server_description should be changed to mongoc_client_get_handshake_description. Currently, mongoc_client_get_server_description only returns a stub identifying the load balancer. The handshake description will describe the backing server that actually executes the operation, which is much more relevant.
