Update to Psalm 5

      psalm 5 supports many improvements to the type system, including better support for array and object shapes. Updating to psalm 5 is also the only way to ensure that we continue to receive updates to the MongoDB extension stubs, as psalm 4 is no longer supported.

      When updating to Psalm 5, any stubs for BSON objects or workarounds for unknown driver method signatures can be removed.

      This depends on PHPLIB-1118 as psalm 5 requires PHP 7.4.
