      Context

      After we update the version of uv in the toolchain, we should update our lock file to remove the usage of the local package version, and ensure that we use the version of uv in the toolchain when available.

      Definition of done

      Lockfile is updated and the build variant that was failing in PYTHON-5295 still passes.
