Add testing for gevent with Python 3.14

      Context

      We are adding Python 3.14 support in PYTHON-5454 but cannot test gevent until PYTHON-5463 is merged, because pymongocrypt depends on cffi<2.0 and is automatically installed by uv on a developmental install.  Rather than adding a special clause for cffi 2.0.0b1, we could wait for a final release of cffi 2.0.0.

      Definition of done

      Add gevent testing with PYTHON-5454. Remove the extra cffi from the dependency group once cffi 2.0 final is released.
