Most of the description of what's needed can be found in the linked WT-14253 ticket. The required steps from server here would be to add a new Statistics log with fields for the key stats as described in the linked ticket. The separate logID/field in the structured log for shutdown should also be added.

WT-14253 will include work done by WiredTiger to expose the required key statistic values for us to output.
