We have seen two cases now where memory seems to increase over time during applying: HELP-72969 and HELP-81632. During the investigation of HELP-72969, we tried to reproduce the problem but were unable to do so. With the more recent case in HELP-81632, and perhaps better insight into the specifics of the workload, we may have better luck writing a reproducer.
