Fix backwards_compatible_timeseries_catalog_options.js in multiversion clusters

      In BACKPORT-26212 we made so that in 8.2 it is now illegal to mix timeseriesBucketsMayHaveMixedSchemaData and timeseries option in the same collmod request. 

      So the jstests/replsets/backwards_compatible_timeseries_catalog_options.js started failing in multiversion suites.

      The goal of this ticket is to change the test to send 2 separate collmod request.
