This can be added in SorterContainerStats or SorterFileStats that tracks the number of times we merge spills. This can lead to easier diagnosing of customer tickets if they are building a workload with a large number of spills or if we want to get a better sense of how many customer workloads actually perform a merging spills process with their index builds/how many iterations of merging spills they go through.
