Extend backup/restore test coverage so the setMultikeyMetadata oplog applier is exercised through the classic (named-pipe) enterprise magic restore PIT replica-set path. Today this oplog entry is only covered on the Atlas disaggregated-storage magic restore path.
Add a dedicated test that, within the PIT window, runs a multi-document transaction turning both a regular index and a wildcard index multikey, then verifies multikeyness is restored on the restored node.
