Investigate and fix disagg_multiversion failures in bucket_granularity.js and bucket_timestamp_rounding.js

      Two time-series DDL tests are failing in the disagg_repl_jscore_passthrough_multiversion suite when running with mixed binary versions:

      As a temporary workaround, both tests have been tagged with disagg_multiversion_incompatible to exclude them from the suite and unblock CI.

      The goal of this ticket is to investigate the root cause of the failures, fix the underlying incompatibility, and remove the disagg_multiversion_incompatible tag from both tests.
