Overview

Bump the pinned mongot-extension and rerank-extension releases in etc/extensions.yml from 1.0.2 to 2.0.0 (amazon2023 x86_64 + aarch64 variants). v2.0.0 is the first release cut against the current extensions api.h; the 1.0.x artifacts predate the 9.0 API changes and no longer load against master.

This is split out of SERVER-129943 (which restores the with_mongot_extension_* suites against the real extension) so the version bump can land first as a small standalone change.
