Fixes commit baae1261feb0 ("SERVER-131951 Log replicated size and count metadata checkpoint (#60028)") which changes flush metric semantics.

Now, we only call recordFlush() when we actually flush to disk, and that requires one or more collection writes. Add a single insert to ensure the flush is successful.
