Add test coverage for the listIndexes format from SERVER-89953

      Some of the early patch releases of 9.0.x / 9.1.x (for example: 9.0.2 GA) included SERVER-89953, so listIndexes explicitly reported simple collation in indexes.

       

      This was later reverted by SERVER-136162 in both v9.0/v9.1, so now there's no multiversion coverage for the mix of binaries that report simple collation and binaries that don't.

       

      This ticket should add this coverage. A possibility, add a passthrough suite where a random subset of the mongods have ListIndexesAlwaysIncludesSimpleCollation enabled.
