Replicated fast count is maintained in the record store. As it is now, _instantiateCollectionIfTesting creates new RecordStore instance, and can thus cause sanitizer or debug builds to return incorrect size metadata.

We should get most of the benefit of instantiating a new instance from durable catalog even if we reuse the shared state.
