Update os name in macos release tarballs

      In SERVER-28004, we started using formal names for build targets in scons on macos, including in release tarball directory names (and release tarball filenames, but Evergreen renames them so we never noticed). This change will preserve the old naming convention using "osx" in tarball filenames and directory names back instead of "macOS"
