Create helper functions for Resharding document members with internal structs

      This isn't necessary, but will make code cleaner and our life easier. blake.oler is already creating one for the fetchTimestamp in a related ticket.

      The goal of this ticket is to create helpers similar to emplaceFetchTimestampIfExists - we are interested in simplifying the logic needed to emplace values for chained structs in resharding.
