Remove assumes_unsharded_collection tag for $lookup jstests

      Many jstests (for example, the ones inside the 'jstests/aggregation/sources/lookup' directory) have the 'assumes_unsharded_collection' tag because $lookup on a sharded 'from' collection previously wasn't allowed. We should add back this test coverage in a way that ensures maximum multiversion testing is also preserved.
