Fix find_symbols on macOS

      Symbols are not being added into the graph file when running a build on macOS. find_symbols.c is responsible for this.

      The --dyldinfo-only option for nm likely needs to be removed and replaced with --add-dyldinfo.

      Also, this needs to be readded to the waterfall, as it has been removed for builds of macOS.
