Consider adding Enterprise RHEL 8.0 (large transactions format) build variant to mongodb-mongo-v6.0 Evergreen project

      The Enterprise RHEL 8.0 (large transactions format) build variant runs with --setParameter maxNumberOfTransactionOperationsInSingleOplogEntry=2 to exercise the format for large non-prepared transactions and large prepared transactions. While the oplog format isn't expected to change in a stable release branch we should probably retain the coverage to lessen any risk of a behavior change.
