Change index collection UUID when copying index metadata in resharding

      SERVER-70828 added code to copy the source indexes catalog into the temporary indexes catalog in the resharding coordinator service. There is some extra work needed though, it is necessary to also change the index collection UUID to maintain the correct references.

      The purpose of this ticket is to change the index collection UUID beside the collection UUID during resharding.
