Rename redactFieldNameStrategy to piiRedactionStrategy in SerializationOptions

      The redaction strategy will be used on collection names as well as field names, so the name should reflect redaction for any personally identifiable information. Proposed names are "piiRedactionStrategy" instead of "redactFieldNameStrategy" and boolean "redactPII" instead of "redactFieldNames"
