We should extend the existing evergreen variants on standalones and replicasets by adding new sharded cluster variants which run appropriate workloads. At the time of writing, this includes the sbe-only and classic-only variants, but in time will also include any tryBonsai variants we add as part of PM-3186.

As a note, this ticket will likely need a separate task to create a new DSI setup, as well as some changes to the AutoRun of genny workloads which we want to include in this variant.
