Remove epoch from migration source manager once 8.0 becomes last-lts

      Currently the migration source manager executes collection validation checks throughout the migration in order to determine the collection did not change, however, after SERVER-20742 the migration manager will not compare the epoch if it's not sent, so, we can simply remove the entire field altogether from the migration source manager.
