Create shardCollection oplog event test

      Apparently, we do not have any test that ensure the shardCollection coordinator emit the correct oplog entries for change stream with the expected format.

      In fact, the regression described in SERVER-79974 was not caught by our testing.

      We should also make this new test cover the case in which shardCollection is executed for a timeseries colleciton.
