Consider including gRPC tests in required builder

At this stage of the project, we may need to consider elevating the gRPC variant to required, or maybe we should introduce a suite that we can add to a required builder that runs a subset of gRPC tests.

This will help avoid surprising BFs for people who do not run the gRPC variant, and is becoming increasingly important as we change the testing infrastructure to support gRPC.

For instance, if somebody adds in a noPassthrough test that requires mongobridge and does not run the gRPC variant, they will encounter a BF if they did not add the new requires_mongobridge flag to their test.
